Isca Restaurant Earns Michelin Guide Recognition Within Months of Opening
Isca at Borde Hill in West Sussex has secured a place in the Michelin Guide just five months after opening, highlighting the quality of its seasonal, garden-led approach.
A restaurant in West Sussex has achieved Michelin Guide status in remarkably quick time since launching.
Isca, located at Borde Hill, opened in summer 2026 and has now earned its inclusion in the prestigious guide. The restaurant is led by executive chef Jack Hazell and head chef Philip McEnaney.
Garden-Led Dining
The restaurant's approach centres on using biodynamic produce from Borde Hill's market garden, alongside edimental flowers, foraged herbs and preserved ingredients. This garden-led philosophy shapes every aspect of the dining experience.
Jay Goddard, managing director and fifth-generation family custodian of Borde Hill, said: "We are delighted to have been included in the prestigious Michelin Guide after only 5 months of opening. We bring garden-led dining to each of our guests, creating joyful experiences each season, and I am incredibly proud of our hugely talented teams across the kitchen, front of house and the gardens which inspire all that we do."
Setting and Design
Isca is housed in a glasshouse overlooking the Walled Kitchen Garden, which has been reimagined by Ann-Marie Powell. The interiors, designed by Nicola Harding, aim to create a relaxed atmosphere connecting diners to the surrounding landscape. A year-round programme of art further enhances the setting.
Seasonal Menus
The menu changes throughout the year in line with the equinoxes and solstices, with daily updates based on what the garden produces. This seasonal philosophy also extends to the drinks menu, which features low-intervention wines, selections from Sussex vineyards and house-made drinks using garden ingredients.
The restaurant can seat 80 to 90 guests and operates year-round. Bookings can be made at iscabordehill.co.uk.
